Yusheng isn’t just a dish but a full-on event every Lunar New Year. For us who participate in it, the higher the toss, the better the luck!
Thankfully, we found some of the best yusheng platters in Singapore packed with premium seafood, vibrant veggies, and bold flavours. I’ll show you where to try these prosperity salads on the island so you can lo hei with the best of them.
The Origins and Significance of Yusheng
Yusheng has ancient roots in China. The version we know today was popularised by Cantonese chefs in the 1960s.
It’s a must-have for the Chinese New Year to symbolise prosperity, abundance, and good fortune. However, many people (like me!) also enjoy it for birthdays, company events, and other celebrations.
Each ingredient has meaning: raw fish is for success, golden crackers are for wealth, and plum sauce is for the sweetness of life. When the ingredients are tossed together during lo hei, families and friends shout auspicious wishes as part of a festive ritual.
How to Perform the Lo Hei Ceremony

Step 1. Gather around. Place the yusheng platter at the centre of the table and make sure everyone has chopsticks ready. Don’t worry about crowding because the more, the merrier!
Step 2. Pour the ingredients in order. Start with the raw fish while saying “Nian Nian You Yu” (abundance every year), then add pomelo for luck and crushed peanuts to symbolise a house filled with gold.
Step 3. Drizzle the sauce. Pour the plum sauce while saying “Tian Tian Mi Mi” (sweet and harmonious relationships), followed by oil for prosperity with “Cai Yuan Guang Jin” (wealth rolling in).
Step 4. Toss high and loud! With chopsticks in hand, toss everything as high as possible while shouting auspicious wishes like “Huat ah!” (prosperity) and “Gong Xi Fa Cai!” (wishing wealth and happiness).
Step 5. Enjoy the feast. Once the tossing is done, dig in and savour the flavours. Don’t worry about making a mess because it’s believed that the messier the table, the better the luck!

Admittedly, the price range at yi by Jereme Leung intimidated me at first. But when my friend described its modern, artisanal take on yusheng, I was intrigued.
Instead of just salmon, the prosperity salad comes loaded with premium ingredients like abalone, Spanish Iberico ham, and sea whelk tied together with a fragrant Yunnan rose petal sauce. It was an unexpected mix that beautifully blended together on my palate.
Pro-tip: If you’d rather lo hei at home, the yu sheng here is also available for takeaway and delivery.

For a luxurious take on yusheng, my bestie and I tried the one at Shisen Hanten. It featured Japanese sea bream and abalone which resulted in a richer and more refined flavour.
It’s a Michelin-starred yusheng experience with the price reflecting it. Still, if you want to elevate the prosperity toss with bold flavours and premium ingredients, this one is worth a try.
Pro-tip: Shisen Hanten’s yusheng is highly sought after during CNY, so reserve at least a few weeks in advance for a spot.

Want a vibrant, garden-fresh twist to the classic yusheng experience? Si Chuan Dou Ha Restaurant offers a contemporary take featuring 32 types of organic vegetables and edible flowers for a healthier and more delicate-looking prosperity salad.
My plant-based sister loves this take, as it allows her to stick to her preferred lifestyle. It doesn’t hurt that the signature plum sauce ties all the ingredients together with a lighter and more herb-y flavour than the usual heavy sweet ones.
Pro-tip: Looking for protein in your yusheng? The restaurant gives options for toppings like smoked salmon, abalone, or spicy chicken.

I wanted to try a Japanese-inspired twist of the yusheng, so I headed to RAPPU Handroll Bar for its lighter and more umami-packed version of the traditional one.
I was pleasantly surprised to find hotate, salmon, uni, tobiko, and yuzu lo hei sauce laid out in front of me. The citrusy dressing and fresh seafood combo were bold and refreshing to the palate, making me glad I tried this fusion dish when I did.
Pro-tip: For the best fusion experience, pair the yusheng with the bar’s sake selection.

Imagine the classic yusheng being given a Thai treatment, and you’ll end up with fragrant herbs, pomelo, mango, jellyfish, and cashew nuts with a tangy chilli dressing in one dish.
That’s exactly what we got at Bali Thai with its refreshing mix of textures and Southeast Asian flavours in one zesty, festive yusheng. My chilihead bestie went nuts over the spicy-sweet kick that sets it apart from traditional versions.
Pro-tip: Toss gently but thoroughly to coat everything in the tangy chilli dressing to ensure a perfect balance of sweet, spicy, and crunchy flavours.

If you love meat and yusheng in equal measure, try Fat Cow’s Gyu Sheng, which features Toriyama wagyu slices, seasoned jellyfish, ikura, and seaweed. The wagyu has a rich umami flavour tempered by the sesame dressing.
It might sound too rich, but the premium wagyu is melt-in-your-mouth tender, I almost forgot to chew it! I reckon this bold, luxurious spin on the traditional prosperity salad is worth at least a try for carnivores and omnivores.
Pro-tip: Try this high-protein yusheng with a cup of green tea for balance.

It’s a fuss-free and comforting choice for traditional lo hei that honours tradition and utilises high-quality ingredients. My family has enjoyed this one for years.

Fancy some poached lobster in your yusheng? Cafe Quenino’s bold version features a contemporary Southeast Asian-inspired twist with lobster and macadamia nuts that’s a tasty departure from the norm.
I love the zesty and fresh dressing that accompanies it. There are notes of lime and ginger flower, so it isn’t as cloying as plum sauce sometimes gets. I give two chopsticks up for this playful and innovative fusion!
Pro-tip: The lobster yusheng is only available during the CNY period and not readily sold for other occasions.

While many consider yusheng a complex salad, I regard the version at Fireplace by Bedrock as a full meal even when I have to share it with famished family members.
Its citrus-fed wagyu yusheng combines tender beef and fresh vegetables, with hints of smokey essence from the open wood fire grill as you bite into it.
It comes in generous serving portions, so you can rest assured everyone will feel “abundantly” full after partaking.
Pro-tip: For the best experience, savour the beef slices separately first to taste the smokiness before mixing all the other ingredients.

The Lo Hei Shirao salad at Tempura Makino takes on the traditional yusheng but places a crispy ice fish tempura alongside fresh salmon sashimi. Since I’ve come to rely on nuts and crackers for my prosperity salad crunch, this one is something of a bold take.
For me, the combination works, as the crispiness and freshness drenched in tangy Mandarin sauce create a delightful fusion of texture and flavours.
Pro-tip: Take the fresh tanginess further with a serving of yuzu sake or cold green tea as your palate cleanser.
